This is a truly incredible selection of Recipes from all around the world for you to enjoy with family and friends in the privacy of your own homes made complete with “QUIZINE” an International Quiz and Cooking game for all.

I tried to make sure that every recipe came from a different country, but some were impossible because there are several letters of the alphabet which do not have countries with the letter or there are only one or two countries with a particular letter. Example is Yemen the only country that begins with a Y, and therefore I had to produce Appetizers, Entrées and Desserts all from Yemen.

TEASER 1

Aruba - Bolitas De Jamon (Appetizer)
These snack pellets are very easy and fun and still nutritious. An ideal finger snack for parties or as an appetizer before lunch or dinner.

Ingredients

1 egg, beaten lightly
1 cup soft white bread, grated
2 tablespoons chopped onion
1 teaspoon chopped fresh parsley
1/8 teaspoon seasoned salt
1/2 teaspoon French's prepared mustard
1 pound cooked ham, ground
1-10 ounce jar pineapple preserves
1-10 ounce jar apricot preserves

Directions

Pre-heat oven 350. Put egg, grated bread, onion, parsley, salt and mustard in a medium bowl. Mix well. Add ground ham and knead together.
Form into 1" balls and place in greased baking dish. Bake for 15 minutes, or until lightly golden.
In a large deep-frying pan or casserole over medium-low heat, add pineapple and apricot preserves and stir with a wooden spoon until almost melted and well blended.
Add ham balls and cook, stirring, until liquid comes to a boil. Serve hot.

TEASER 2

Gambian - Catfish Stew (Entrée)

Ingredients Serves 4

4 large cuts of smoked catfish
3 medium onions
4 tbsp of tomato paste
2 bay leaves
2 cups oil
3 gloves garlic
2 carrots
1 large tomato
1 medium cassava
1/2 small cabbage
Salt and pepper to taste
Hot chilli peppers can be added if you like it really spicy

Preparation
Wash Catfish thoroughly with hot water and lime.

Blend onions and chopped tomatoes. Fry blended onion mixture with tomato paste for 5 minutes.

Then add 5 cups of water and seasoning.
Insert Catfish and vegetables and bring to boil.
When almost cooked, reduce heat and re-season to taste.

Cover partly with lid and leave to simmer slowly. Serve with plain, boiled rice.

TEASER 3

Sri Lankan Watalappan (Dessert)

3 jaggery halves (about 3 cups)
9 eggs
2 cups thick coconut milk
1/4 tsp nutmeg
1/4 cup cashew nuts, halved
(Dark brown sugar is the closest jaggery substitute. Other healthy alternatives include molasses, muscovado sugar, demerara sugar, honey, piloncillo, agave nectar, and maple syrup).

Directions
Break the jaggery into pieces. Put into a saucepan with 1 cup of water and cook under medium heat till the jaggery has completely dissolved. Remove from fire and add the coconut milk. Beat the eggs till frothy.

Next, add the coconut-jaggery mixture to the eggs, a little at a time, while beating continuously. Make sure not to add the whole mixture to the eggs all at once, since this will curdle the eggs.
Transfer to a heat-proof bowl or pan. Add the cashew nuts. Now you can cook the watalappan either on the stove or the oven.

Stove-top directions
Tie the brim of the bowl with plastic wrap or oil paper. Set in a saucepan with water about 3 inches high. Boil till set (approx. 40-50 mins).

Cover the bowl with aluminum foil. Set in a larger pan with water about 1 inch high. Bake at 375 F for an hour.
